什麽是窒化鐡? What is nitrided steel?
在鍋具表面加入由氮和鐵結合成的氮化層。是一種用於防止飛機和汽車零件生鏽的加工技術,窒化處理後的金屬表面硬度與耐磨度均會大幅度提升。窒化鐵鍋無毒及耐用,是未來之流行趨勢。
Nitriding is a heat treating process that diffuses nitrogen into the surface of a metal to create a case-hardened surface. It greatly improves the hardness and rust re-sistance properties.
極度簡單的開鑊過程
Easiest seasoning process ever!
再沒有艱難的開鍋! 鍋具用洗潔精徹底清洗乾淨及抹乾後,凍鍋加入~100ml的食油,中小火加熱~10分鐘,倒起食油,並用廚房紙抹去剩下之食油,完成開鍋!
Clean the new pan thoroughly with water and detergent. Wipe dry and pour ~100ml of cooking oil into the pan and cook at medium low heat for ~10 minutes. Wipe clean afterwards with kitchen towels. Done!
先熱鑊,後加油,物理不粘鍋! Easy to use with great food release!
跟生鐵鑊一樣,先熱鍋,後加油,煎雞蛋也絕不粘。不粘效果也會隨著使用變得越來越好。鐵鍋可使用電磁爐,但由於電磁爐火力不平圴,建議不要高溫空燒,否則可能導致變形。應先加油,然後慢速加熱。
Like any carbon steel pan, preheat the pan first before adding oil. Nonstick properties improve over time.
When using an induction stove, please avoid heating an empty pan. Poor heat distribution by induction stove could cause deformation to the pan. Pour in the oil first and let the pan heat up slowly on an induction stove.

保養簡單 Easy maintenance
使用後,正常的用清水及刷洗淨,其後用布抹乾或用低火烘乾。減少或不用洗潔精,可有助不粘面形成及變得更順滑。
Clean with a brush and running water. Avoid using excess detergent to aid seasoning build up. (If possible, do not use detergent) Wipe dry or put on a low heat to dry the pan completely.
注意事項 Notes:
1)鐵鍋出廠後表面會有一層薄油灰,用清水及洗潔精徹底清潔後便可以開始使用

3)長期烹調重酸性食材可能導致鐵表面變白,這是正常現像,並不會影響食物味道或鍋的使用
Cooking acidic food for a long time could cause the surface to turn white. This is totally normal. It will not affect the property of the pan.
4)所有鐵製鍋具在清洗後,可能還會抹出黑點。是因清潔不足而累積下來的食物殘渣遇熱後,焦化成炭粒,但按日常食用到的機會,這種物質對人體是無害的。
After cleaning, you may still find black spots on the pan. This is due to insufficient cleaning. The black spots are burnt food residue but are insufficient to cause harm. You can leave it as it is or clean the pan again.
5)鐵鍋被刮花了也不會影響健康,因為沒有塗層,和食物接觸的表面並沒有改變,只是可能變得不平滑,但不影響使用。
A scratched pan is safe to use as there is no coating. The cooking surface is just not as smooth but will not affect how a carbon steel pan works.
6)鐵鍋的顏色會隨使用變得愈來愈深黑,因為鐵在加熱時,空氣中的氧氣和水很容易引起氧化,形成一種呈深黑色、藍黑色的物質-四氧化三鐵,這是一種氧化層,對人體無害。
The more you cook with the pan, the darker it becomes. This is due to oxidation of water and oxygen in the air while iron is heating up. It is a passivation process that produces a layer of Fe3O4 on the surface of steel to protect the pan from rust.
